Nigiri Sushi
Learn the kotegaeshi technique — the professional hand-shaping method for nigiri. Shape vinegared rice with a quick flip of the wrist and drape premium tuna (akami & chutoro), salmon, and shrimp on top.
Futomaki (Thick Roll)
Roll a beautiful futomaki — a thick roll packed with all the fillings at once: tuna, cucumber, tamagoyaki (Japanese omelet), and takuan (pickled radish). Learn to roll it tight with a bamboo mat.
Sake Ceremony
Open a sake barrel together in the traditional kagamibiraki style.
Matcha Whisking
Whisk your own ceremonial-grade matcha to finish the experience.

Kotegaeshi (小手返し)
The signature hand-shaping technique for nigiri sushi. You'll learn to form a small rice ball in your palm and flip it with a quick wrist movement, pressing the fish topping on with just the right amount of pressure. This is the same technique used by professional sushi chefs — and you'll be surprised how quickly you pick it up!
Sharikiri (シャリ切り)
The art of mixing sushi rice with vinegar. Using a miyajima (wooden paddle) and handai (wooden tub), you'll learn to cut and fold — never stir — the rice with seasoned vinegar. This slicing motion prevents the grains from becoming mushy and creates the glossy, perfectly seasoned shari that is the foundation of great sushi.

Learn to use the same tools that professional sushi chefs use in Japan
Handai (飯台)
A traditional wooden sushi rice mixing tub made from cypress. The wood absorbs excess moisture, creating perfectly textured sushi rice. You'll mix your shari in this just like the pros.
Miyajima (宮島)
A flat wooden rice paddle used to cut and fold sushi rice with vinegar. The technique of using a miyajima — slicing rather than stirring — prevents the rice from becoming mushy.
Makisu (巻きす)
A bamboo rolling mat essential for making maki rolls. You'll learn the proper technique to roll tight, even rolls every time.
